Chocolate Zucchini Muffins

Part of the No Diet lifestyle eating your favorite food. Food has to satisfy us both physically and emotionally. These moist chocolate muffins will take care of your chocolate craving and hunger. They work as a great #bridgesnack or paired with a little more protein for a #powersnack.


1 cup plain greek yogurt 2 ripe bananas (or 1 cup mashed) 2 eggs 2 cups rolled oats 4 tablespoons brown sugar or coconut sugar 1 1⁄2 teaspoons baking powder 1⁄2 teaspoons baking soda 1⁄2 teaspoon cinnamon 1 teaspoon vanilla extract 1/4 cup cocoa powder 1/4-1/2 cup chocolate chips 1 cup grated zucchini, squeeze out excess liquid with a clean towel

1. Preheat oven to 400F and stray muffin pan with cooking spray or line with paper liners (and spray the liners because will stick because no oil in the recipe). 2. Add all the ingredients except the chocolate chips and zucchini to a food processor or blender. Blend until the oats are broken down and it is smooth and creamy. 3. Stir in zucchini and chocolate chips. 4. Pour the batter into muffin tins and fill until 3⁄4 full (makes 12-15) 5. Bake for 15-20 minutes, until the tops of the muffins are set

NOTE: make sure to squeeze the excess water out of the zucchini. If not the muffins with be soggy and dense.
