Banana Chocolate Chip Muffins

Healthy, real food, filling and prepared in less than 10 minutes. These muffins (AKA blender muffins) are there when you need a satisfying sweet fix! They also freeze really well.


1 cup plain greek yogurt 2 ripe bananas (or 1 cup mashed) 2 eggs 2 cups rolled oats 3 tablespoons brown sugar or coconut sugar 1 1⁄2 teaspoons baking powder 1⁄2 teaspoons baking soda 1⁄2 teaspoon cinnamon 1 teaspoon vanilla extract 1/4-1/2 cup chocolate chips

1. Preheat oven to 400F and stray muffin pan with cooking spray or line with paper liners (and spray the liners because will stick because no oil in the recipe). 2. Add oats to a food processor or blender and blend until it looks like a flour

3. Add in all the ingredients except the chocolate chips to a food processor or blender.

4. Blend until smooth and creamy 3. Stir chocolate chips. 4. Pour the batter into muffin tins and fill until 3⁄4 full (makes 12-15) 5. Bake for 15-20 minutes, until the tops of the muffins are set.
